Basil Chicken Salad


A tasty and healthy salad for the hot summer days.

6 tablespoons mayonnaise and/or plain yogurt (fat-free works, if you want fewer calories)
2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
1/4 teaspoon hot sauce
1/4 teaspoon ground pepper
3 cups chopped cooked chicken breast
1/2 cup chopped celery
1/4 cup chopped green onions (can substitute or add tomato if you prefer)
1/4 cup shredded fresh basil
6 cups shredded fresh spinach or greens
1 1/2 tablespoons pine nuts

1. Combine first 5 ingredients and stir well.
2. Combine chicken, celery, onions, and basil in a medium bowl. Add to mayonnaise mixture and toss gently.
3. Place 1 cup of spinach on each of 6 salad plates.
4. Spoon chicken mixture evenly over each plate.
5. Sprinkle with pine nuts.
