Shrimp Pad Thai Supper Recipe




Spicy cucumber salad Combine 2 cups thinly sliced seeded peeled cucumber, 1 cup julienne-cut bell pepper, and 1/4 cup thinly sliced red onion in a large bowl. Combine 1 tablespoon sugar, 2 tablespoons fresh lime juice, 1 tablespoon fish sauce, and 1/2 teaspoon crushed red pepper in a small bowl. Pour dressing over vegetables, toss to combine.

Total time: 30 minutes

1. While water for noodles heats:
• Prepare cucumber salad.

2. While noodles soak:
• Peel and devein shrimp.
• Combine sauce ingredients.
• Slice green onions.
• Beat eggs.

3. Prepare pad thai.
